Which sugar is better: black or white?
The ingredient called molasses gives the dark color to the brown sugar. Molasses is a thick liquid product derived from sugar cane or beet, rich in carbohydrates, vitamin B and mineral salts.
If the sugar is refined, it will be white sugar, while the unrefined will be black sugar with trace amounts of molasses. Therefore, black sugar is slightly richer in nutrients than white sugar.
But that's pure theory. In fact, the real black sugar is obtained from the crystallization of the juice of the cane, without being processed or refined, and is usually viscous. What is currently sold as black sugar, however, is generally only white sugar to which molasses extract has been added. It is usually a sugar that is not viscous at all and its nutritional value is very similar to that of white or refined sugar.
Therefore, when choosing the type of sugar, it is better to pay attention to the taste rather than to the nutritional qualities. In fact, they both get fat in a similar way.
