To say that Caviar is a precious food we do not reveal any secret, but did you know that snail eggs are from Caviar?

Erramona Etxarri, from Ipar Euskal Herria, was the first person to start production with this discovery. It has ten small fields of eight square meters. In these areas there is a special humidity for the optimal development of snails.

From June to October snails lay eggs, each about one hundred. Once the eggs are collected they are cleaned in the water and then proceed to the classification, separating the good from the bad. The best eggs are ready for sale.

This year Etxarri has achieved a production of more than twenty kilos. Happy!
