American researchers have developed an edible membrane to protect food. The membrane has two main components, a natural fiber containing seafood, chitosan and a protein of eggs, lysozyme.

The two ingredients are natural antibacterial products, the first is an external hard layer product of prawns and crabs and the second is an egg white product. As both are food ingredients, their combination is also edible. Other foods can also be added to the membrane itself, such as vitamins or calcium. In addition, they have made very thin membranes, so they do not add flavor to the coated food.
