Young students and researchers working together: collaborative research on celiac disease

The students of ESO from the Benjamín de Tudela Center studied, together with the research group GL3S of the University of the Basque Country (UPV/EHU), the topic of celiac disease and the gluten-free diet, in the course of 2021-2022, under the Elhuyar Zientzia Azoka initiative.

The students worked collaboratively with the university researchers. Organized in groups, a specific topic related to celiac disease or gluten was chosen and, following the scientific method, each group developed its research project led by members of GL3S.

The topics covered were as follows:

  1. Balanced diet
  2. Symptoms of celiac disease
  3. Gluten chemistry
  4. Gluten-free products
  5. Cross-contamination of food
  6. Nutritional balance of the gluten-free diet
  7. The social barriers created by the gluten-free diet.

The groups developed related works, in some cases with the help of other groups. Young people developed simultaneously knowledge related to food. Therefore, at the end of each project a communication was made of the research work to construct knowledge among all and promote a positive interdependence among peers.

Participating activities of this type are very interesting: students assume the role of scientists, apply a scientific method to analyze a theme and, thus, can develop their critical thinking.
