Researchers from the Public University of Navarra have described in a book 276 varieties of native apple from Navarra. In addition, a great wealth of genetic biodiversity has been observed, as many samples are genetically different.
Diversity is evident, among other things, in the strength of the trees, in the tendency to fork and in the color and size of the leaves and flowers. There are varieties of table and cider, which can be used in pastry, and others that cannot be used, since they are very sweet or because of the consistency and firmness of the crumb are not suitable for consumption or cider making. But they may have other capabilities, such as pest and disease resistance.
